I disagree with your opinion about Si and Jean, I definitely see something MORE than friendship, and you can see that as well in in 80s, Chipwrecked, and the new episodes! Maybe you think this way because of the many things in common, but I think the other couples have same interests as well and that means nothing.
In real life couples should have SOME things in common as well.

The angle on the camera suggests that those are Alvin's perceptions. If the situations played out on the screen, it would be clear that it would be what everyone was seeing. Also, remember that the machine broke a few times while Simon was trying to operate it.
While Alvin and Brittany are on and off again friends and have some interest in each other, given that both are polyamorous, they likely won't marry or stay married if they did.
I watched the meet the wolfman special, but I don't remember the dating. In the play that misinterprets the source work, I believe Eleanor was playing Dr. Jekyll's mistress. I will agree that Eleanor and Theodore are very close friends, but I've never seen them date in the series. Same thing with Simon and Jeanette.
